Chicken soup with rice

Meimei learnt a song from school last semester - Chicken soup with rice. Initially I wanted to steam the Emperor's Chicken (with the ready-made sauce) but I don't have the tray/plate. So, the chicken was used to make the chicken soup instead.

I was trying to get a colour and taste similar to soto ayam since I don't have quite a number of the ingredients. But the soup turned out quite good.




The kids' soup is clearer because I strained the chopped garlic and onion. It's still the same soup, just strained prior to serving.

Ingredients

1 litre chicken stock (I boiled 2 chicken thighs. Removed when they're cooked and removed the meat. Then put the bones back in to boil. Added 6 slices of ginger.)
1 1/2 tsp salt
1 tsp sugar
1 tsp tumeric powder
lettuce

Method

1. Heat up the chicken stock. Season according to your preference.
2. Add the chicken meat and lettuce.
3. Serve warm.
