This may seem like a simple dish to prepare. It's actually quite a challenge not to overcook the noodles and at the same time, achieve the right balance of saltiness and sweetness.
To avoid overcooking the noodles, I cooked the meat and eggs separately. Then I boiled the noodles for about 1 minute, basically to separate them. Then combine them again, after adding the seasoning for the noodles. It actually turned out quite yummy.
Ingredients
chicken meat, cut into bite size
eggs, slightly beaten
2 3/4 pieces of egg noodles (diameter approximately 8.5cm, 100g each piece)
Seasoning for the noodles
3 tbsp light soy sauce
2 1/2 to 3 tbsp water
1 tbsp sugar
1/2 tsp dark soy sauce
1/2 tsp salt
dash of white pepper
sesame oil
Method
1. Prepare the seasoning, stir and set aside.
2. Fry the meat and eggs separately. Set aside.
3. Boil water and cook the noodles until it's about half cooked. Drain.
4. Heat up the pan, add sesame oil before adding the noodles. Using a pair of chopsticks, mix the noodles with the sesame oil. Then add the seasoning and mix well, ensuring all the noodles are coated with the seasoning. Add the meat and eggs.
5. Once the noodles are fully cooked, remove from heat and serve fresh.
