Coconut rice

It is really just coconut with rice; not the nasi lemak because I didn't use the other ingredients from the various recipes that I found on the web. Plus I haven't seen pandan leaves in the supermarkets here, so we'll just have to make do without them.

I fried some egg omelettes, chicken curry (kids' version) and the local luncheon meat (beef and it's not good at all) and sausages. To my surprise, the kids like the rice although I feel that it's not fragrant at all.

Sticky coconut rice



Ingredients

2 cups rice (I used the Jap type which made the end product a little sticky)
1 1/4 cup coconut milk
2 cups water
4 slices of ginger
1/2 tsp salt

Method

1. Put all the ingredients except the rice into the rice cooker and let it boil.
2. Add rice and cook until done. I did mine twice cos it didn't look fully cooked the first time round.

Chicken curry (kids' version)



Ingredients

chicken meat, cut into bite size
2 tsp curry powder (approx)
1 tsp salt (approx)
pepper
oil
water

Method

1. Season the chicken meat with some salt and pepper. Set aside.
2. Mix the curry powder, salt with the water. Mix well.
3. Heat up a little bit of oil and fry the chicken meat until there's no more 'juice'.
4. Add the curry water mixture, stir and let it boil. Add more powder or salt to your preference. Remove from fire and serve warm.
